A Crispy Delight from Konya

Kıtır Mantı (a type of crispy Turkish ravioli) holds a significant place in Konya's culinary culture. Its history stretches back a long way, and it is made using a preparation method unique to the region.


Ingredients:

  • 2 tea glasses of boiled green lentils
  • 6 cups of water
  • 2 teaspoons of salt


For the Dough:

  • 1,5 cups of flour
  • 4\3 tea glass of water
  • 1 egg
  • 1 teaspoon of salt


For the Crispy:

  • 3 tablespoons of butter
  • 5 tablespoons of ravioli


For the Yogurt Sauce:

  • 1 cup strained yoghurt
  • 1 clove of garlic
  • 1 teaspoon of salt


Recipe:

To prepare Kıtır Mantı, start by combining flour, egg, water, and salt in a bowl, then knead the mixture well. Once the dough is ready, roll it out using a rolling pin. Next, place the dough in a flat-bottomed hot pan and cook until it slightly hardens. Afterward, cut the dough into small squares.


In a separate pan, bring 6 cups of water and lentils to a boil. Once the water is boiling, add the cut ravioli and cook for about 5 minutes. While the ravioli is cooking, crush garlic with salt in a bowl, then add yogurt. Gradually add water to achieve a creamy consistency and mix well.


Once the ravioli is cooked, stir in the creamy yogurt mixture. For added texture, melt butter in a separate pan and fry 5 tablespoons of ravioli until crispy. Finally, top the ravioli with the crispy pieces, sprinkle red pepper and black pepper on top, and serve hot.
