To prepare Kıtır Mantı, start by combining flour, egg, water, and salt in a bowl, then knead the mixture well. Once the dough is ready, roll it out using a rolling pin. Next, place the dough in a flat-bottomed hot pan and cook until it slightly hardens. Afterward, cut the dough into small squares.
In a separate pan, bring 6 cups of water and lentils to a boil. Once the water is boiling, add the cut ravioli and cook for about 5 minutes. While the ravioli is cooking, crush garlic with salt in a bowl, then add yogurt. Gradually add water to achieve a creamy consistency and mix well.
Once the ravioli is cooked, stir in the creamy yogurt mixture. For added texture, melt butter in a separate pan and fry 5 tablespoons of ravioli until crispy. Finally, top the ravioli with the crispy pieces, sprinkle red pepper and black pepper on top, and serve hot.
