A Taste of Konya's Rich Cuisine

Mevlana pastry, which is one of the main flavors of breakfast and afternoon snacks, is made by mixing parsley, white cheese, and black pepper, then placing it inside the filo dough.


This delicious treat, which turns into a crispy pastry when baked in the oven, is accompanied by tea.


Ingredients

For the dough:

  • 100 g butter
  • 3.5 cups of flour
  • 1 small cup of yogurt
  • 1/2 small cup of water
  • 2 eggs
  • 2 egg whites
  • 1 teaspoon of baking soda
  • 1 teaspoon of salt


For the filling:

  • 125 g white cheese (grated)
  • 1 bunch of parsley (chopped)
  • 1 teaspoon of black pepper
  • 2 egg yolks


How to Make It

  • Melt the butter in a saucepan. In a large bowl, combine the flour, yogurt, baking soda, eggs, and salt, and knead until you obtain a soft dough. Divide the dough into walnut-sized portions, cover with a damp cloth, and let rest for 10-15 minutes.
  • Roll out each portion into a 15 cm diameter circle. Brush the layers with the melted butter, stack them three at a time, and let them cool. Repeat this process for all portions.
  • Roll out the stacked dough into a very thin sheet. Brush the entire surface with melted butter and fold it into a parcel shape.
  • For the filling, mix all the ingredients in a large bowl. Cut the dough into squares, place the filling in the center, and fold them into triangular shapes (like samosas).
  • Place the pastries on a baking sheet lined with parchment paper. Brush them with more melted butter and bake in a preheated 180°C oven until the tops are golden and crispy. Serve hot or warm.
