Delicious Tandoor Soup from Konya
Tandoor Soup is a nutritious dish made with grains, legumes, and meat. One of Konya's most well-known soups, it derives its name from the traditional method of cooking in a tandoor.
Tandoor Soup is a traditional Turkish dish traditionally cooked in a tandoor, a clay oven. However, it is now more commonly prepared on the stove or in a conventional oven.
Ingredients
- 1 cup of green lentils
- 1 cup of chickpeas
- 1 cup of dried beans
- 2 tablespoons of butter
- 2 tablespoons roasted minced meat
- 2 onions
- 1 cup of fine bulgur
- 1 tablespoon of tomato paste
- 8 cups of broth
- 1 dessertspoon of red pepper
- 1 dessertspoon of black pepper
- 1 dessertspoon of salt
Recipe
- Start by soaking the lentils, chickpeas, and beans in water overnight. In a large pot, heat some oil and sauté the chopped onion until golden. Add the bulgur and tomato paste, stirring well to combine.
- Next, add the soaked lentils, chickpeas, and beans to the pot, followed by the broth.
- Add the chopped peppers and cover the pot. Bring to a boil, then reduce the heat to low and simmer.
- Let the soup cook for about an hour, or until the beans and chickpeas are soft. Season with salt and cook for an additional ten minutes before removing from heat.
- Allow the soup to rest for 15-20 minutes before serving.
