Discovering Konya's Çirli

Konya's "Çirli" dish is a delicious and hearty dish that originates from the Turkish city of Konya. It's made with tender chunks of meat, tomato paste, seeded black raisins, and spices, resulting in a savory and slightly sweet flavor profile. Here's a recipe that you can use to make "Çirli" dish at home:


  • 150 gr small pieces of lamb rib
  • 200 gr lamb cubes
  • 1 tablespoon of butter
  • 1 tablespoon of oil
  • 1 teaspoon of tallow or tail fat
  • 1 teaspoon of powdered pepper
  • 1 teaspoon of tomato paste
  • 1 medium-sized onion
  • 1 cup of seeded black raisins (dried black raisins according to the season)
  • 1 teaspoon of black pepper
  • 1 teaspoon of sugar


Put the oil in the pot and add the meat and fry until it turns color. After adding the powdered pepper, tomato paste and 1 onion as a whole, add enough water and cook until the meat is tender. Add the grape and boil until it swells. Add black pepper and sugar when it gets thicker. When it comes to boil, let it rest, then serve.
