Mevlana Pastry
Mevlana pastry, which is a flavor unique to Konya, is formed
by preparing the finely opened doughs with the desired mortar and folding them
in the form of a triangle and baking them in the oven. Mevlana Pastry is one of
the famous tastes of Konya. This Pastry, which everyone eats fondly, takes its
name from the famous philosopher Mevlana Celaleddin Rumi.

Put the flour, yogurt, baking soda, eggs and salt in a large
bowl and knead so that you get a soft consistency dough. Divide the resulting
dough into walnut-sized meringues, cover with a damp cloth and let it rest for
10-15 minutes. Put the butter and greased dough three in a row and wait for the
fat to freeze. Mix all the ingredients necessary for the internal mortar in a
large bowl. Divide the resulting square into four parts, putting the inner
mortar in the middle and closing it in the form of a triangle. Bake in a
preheated 180-degree oven. Put the cooked pastries into the serving dish.
