Special sherbet varieties for Konya cuisine appeal to both
the eye and the palate.
Basil Sherbet:
Ingredients
1 bunch of basil
8 cups of water
7 tablespoons of sugar
5-6 cloves of lemon salt
Half-squeezed lemon peels
Recipe
Wash the basil and divide them into several pieces with your
hands. Put them in a jug, add boiling water and sugar. When the sugar melts,
add the lemon salt and lemon peel, then let it cool. Put it in the fridge after
cooling outside. Add ice to the glass
and serve.
Honey Sherbet:
Ingredients
6 cups of water
4 dessertspoons of honey
Recipe
Mix the honey and water. Strain with a clean cloth. Serve
when cool.
Milk Sherbet with
Honey:
Ingredients
4 cups of warm milk
4 teaspoons pure honey, filtered without melting
Recipe
Stir the milk until the honey melts. Strain with a clean
cloth. Serve when cool.
Apple Sherbet:
Ingredients
2 kg green apples
1 kg granulated sugar
2 liters of water
2 cinnamon sticks
Grated peels of 2 apples
Recipe
Peel the apples cut them in half and put them into a deep
saucepan. Add water, cinnamon, peels, and sugar. After boiling for about half
an hour, take it off the stove. Strain in a thin cheesecloth or strainer, serve
cold.
Rosewater Sherbet:
Ingredients
50 gr fragrant rose petals
150 gr sugar
5 cups of water
Recipe
Cut the white parts of the rose petals with scissors. Rub
them with half of the sugar in a bowl. Leave it for 1 hour. Boil the water with
the remaining sugar and take it off the stove. Add the rose petals when it is
warm. When cool, strain with a clean cloth and serve cold.
Carob Sherbet:
Ingredients
1 kg Carob
4 liters of water
1 cup of molasses
Recipe
Clean the carob and mash it well. Put it in a large
saucepan, add the water, mix well and boil. Take it from the fire, let it cool
and strain. Add molasses to the strained water and sweeten. After resting the
sherbet for one day, remove the clear water on it. Then serve.
Hurma Sherbet:
Ingredients
200 grams of dates
1 tea glass of granulated sugar
5 cups of water
1 teaspoon of cinnamon
Cloves (optional)
Recipe
Put the water in the pot and boil. Add the dates. Cook over
low heat until they deform. Then add sugar and cook for another 5 minutes. Add
cinnamon just before taking it off the stove. Press the dates with a spoon and
crush them. Strain the mixture through a strainer or cheesecloth. Add water
when cooled and serve.
