Squash with Eggs from Konya Cuisine

Squash with Eggs is a simple yet flavorful dish popular in Konya and other parts of Turkey. It's a great option for a quick and easy meal.


Ingredients

  • 1 kg black squash
  • 2 tablespoons of butter
  • 1 finely chopped onion
  • 1 dessertspoon of tomato paste
  • 2 eggs                            
  • 2 tomatoes
  • 1 cup of flour                            
  • 1 teaspoon of red pepper


Recipe

Add oil to a saucepan and fry the onion until it turns pink. When the onion begins to turn pink, add the ring-shaped cut squash and cook for a while. Then add tomato paste and continue roasting. Add the peeled and diced tomatoes, salt and red pepper. Cook over low heat for a while, break the eggs and scramble them with a fork. Pour the scrambled eggs over the roasted ingredients. After taking it off the stove, turn it over and serve.
