Fırın Kebab is one of the signature dishes from Konya, a city in central Turkey renowned for its rich culinary heritage. The name literally means “oven kebab,” and it refers to a slow-cooked lamb dish that’s both deeply flavorful and tender.
Traditionally, it’s made with a whole lamb or lamb shoulder that’s seasoned simply with salt, sometimes with a bit of pepper or mild spices, letting the natural taste of the meat shine. The lamb is placed in a deep pan or tray and cooked slowly in a wood-fired oven for several hours.
