Zülbiye: Konya's Traditional Delight

Zülbiye is a dish made with a generous amount of shallots, chickpeas, and tender lamb meat, all flavored with vinegar. It has been a beloved dish in Konya for many years.


Ingredients

  • 500 gr cubed lamb meat 
  • 500 gr shallots
  • 100 gr butter
  • 1 tablespoon of tomato paste
  • 1 dessertspoon of salt
  • 1 teaspoon of black pepper



Recipe

Boil the meat cubes in advance and put them in the pan. In another pan, fry the oil and onion a little, add the black pepper and mix. Add the tomato paste and let the tomato cook. Add the onion paste to the previously prepared meat. Add 1-2 cups of broth. Add a spoonful of salt and cook on the stove until the meat is tender.
