Purslane Dish From Konya Cuisine

Purslane is a nutritious and delicious ingredient used in many cuisines around the world, including Konya.  There isn't a widely known specific dish featuring purslane in Konya, but purslane is a common ingredient used in soups and stews.


  • 5 tablespoons of Butter (melted)
  • 1 medium-sized onion
  • 500 gr Purslane
  • 1 dessertspoon of salt
  • 1/4 cup of rice
  • 3 cups of water


  • Fry the onion in oil until it turns pink.
  • Put purslane and fry.
  • Add salt and water, and boil. 
  • Wash and add rice.
  • Cook over low heat.
