Sour Zucchini

In Konya, after cooking a long pear-shaped meat squash, it is left to on an earthen roof under the stars overnight. Because this dish adds flavour to its taste as it waits. The next day, it is decorated with the leaves of marigold flowers and served. This delicious zucchini, also known as gourd or long squash in many parts of Anatolia, is cooked with meat, chickpeas and unripe grape juice. The people who eat this dish say that even the stars in the sky are not enough to describe the taste of magnificent meal. However, in order to prepare this dish properly, it is necessary to find the best ingredients and cook it in a tinned copper pot.


  • 2 cups of lamb meat
  • 1 cup of boiled chickpeas
  • 1 large onion
  • 2 gourds
  • 1 bunch of unripe grapes or lemon
  • 1 tablespoon of tomato paste
  • 1 tablespoon of butter
  • 1 fresh tomato
  • 1 green pepper
  • 1 teaspoon of salt
  • purple basil (upon request)



Fry until the meat is soft.

Add butter, onion and pepper and fry.

Then add the tomato and tomato paste and fry.

Add boiled chickpeas on top.

Chop the zucchini and put them in the pot.

Put the grape vine whole.

Add salt and cook on low heat for half an hour.
