Start by soaking the lentils, chickpeas, and beans in water overnight. In a large pot, heat some oil and sauté the chopped onion until golden. Add the bulgur and tomato paste, stirring well to combine.
Next, add the soaked lentils, chickpeas, and beans to the pot, followed by the broth.
Add the chopped peppers and cover the pot. Bring to a boil, then reduce the heat to low and simmer.
Let the soup cook for about an hour, or until the beans and chickpeas are soft. Season with salt and cook for an additional ten minutes before removing from heat.
Allow the soup to rest for 15-20 minutes before serving.
