Bütümet is a kind of meat dish. Bütümet (Middle) is prepared
by scalding the forearm or rib of the sheep first and then frying it. Konya
Bütümet / Konya Orta (middle) was registered by the Turkish Patent and
Trademark Office on 27.10.2021 and received a geographical indication. Apart
from rice with chickpeas, it can also be served on potato, eggplant or wedding
pilaf.

Recipe
Pour 1 bay leaf, 1 lemon slice and 1 tablespoon of vinegar
into the meat and boil until tender. Take the boiled meat and put it on a
strain. Let the meat rest on the strain for a while and then in the milk for 10
minutes. Heat the oil in a frying pan and fry the meat in this oil. Serve on
rice with chickpeas.
