Konya’s Rich Food Culture Gains Another Geographical Indication

Konya Metropolitan Municipality Mayor Uğur İbrahim Altay announced that Kifaye, one of the city's traditional flavors, has received geographical indication certification, making it Konya's 78th certified delicacy.


As a result of the geographical indication efforts led by the Konya Metropolitan Municipality, another unique flavor of Konya has been registered.


Mayor Altay stated that the registration of this unique flavor, with a history spanning centuries, as a reflection of the city's rich culinary culture contributes to highlighting Konya not only as a city of commerce, agriculture, and academia but also as a prominent tourism destination.


Mayor Altay stated, "Since 2020, we have made it our principle to meticulously preserve the city's culinary heritage. As Konya Metropolitan Municipality, we have turned our city into one of Turkey's leading cities in terms of registered products, with 9 designations of origin labels and 69 geographical indication labels. We will continue to pass our ancient cuisine on to future generations and promote it to the world. Congratulations!"


Konya's flavors captivate not only Turkey but also the world. Products like Kifaye showcase the deep-rooted history of tastes that have graced tables for centuries. These treasures play a significant role in promoting the city's cultural richness to the world through its culinary heritage.


Registered delicacies such as Konya Semolina Halva, Okra Soup, Etliekmek, and Tandur Kebab highlight the richness of Konya's culinary culture. Known as one of Turkey's gastronomy capitals with its unique dishes combining history and flavor, Konya is set to expand this list further with three new products awaiting registration in the near future.


Ingredients:

  • 1 kg of fruit (pear, quince, apple, peach, sour cherry, apricot) – pear is commonly used in Konya.
  • 400 ml of water
  • 170 grams of white sugar
  • 1 star anise
  • 1 cinnamon stick
  • 3 grams of turmeric
  • 26 grams of powdered sugar (for the sauce)


After washing the fruits, remove the pits from all fruits except for the sour cherries, peel them, and slice them. In a deep pot, bring the water to a boil, then add the fruits along with optional star anise, cinnamon, and turmeric. Boil the fruits until they soften, then add the sugar and boil for an additional 5 minutes. Remove from heat and allow to cool. For the sauce, melt the sugar in a small pan until it caramelizes, then pour it over the fruit before serving.
