Ingredients
For the Dough:
1 cup of warm milk
20 grams of fresh yeast
1 cup of flour
Half a glass of yoghurt
Half a glass of oil
1 tablespoon of sugar
1 egg white

For the Stuffing:
1 cup of cracklings (roasted tail fat)
1 large-sized onion
2 tomatoes
2 green peppers
Parsley
Red Pepper Flakes

Recipe
The skins of the tomatoes are peeled for the filling of the Pastry.
Onion, pepper, tomato, and parsley are finely chopped. Cracklings and spices
are added and mixed. In a mixing bowl, warm milk, fresh yeast, sugar, and a
small amount of flour are added and mixed. After waiting for 10 minutes for the
yeast to activate, the other ingredients except for the flour are added. It is
kneaded by adding flour until a soft and slightly sticky dough is obtained and
left to rise for 20 minutes. Oval-shaped balls are made from the risen dough,
similar in size to the filling, and the prepared filling is placed on top of
the balls. The edges of the dough are joined together to form a thin, elongated
shape without disturbing the oval shape. They are brushed with egg and baked in
a preheated oven at 200°C. Konya Pastry With Cracklings is served after being
