Sour Zucchini Dish: A Konya Specialty

Sour Zucchini Dish is one of the unique flavors of Konya's traditional cuisine. This dish is created by combining gourd with sour ingredients. A significant part of Konya's local culinary culture, Sour Zucchini Dish is both a healthy and delicious option.


Ingredients

  • 2 tea glasses of lamb
  • 1 tea glass of boiled chickpeas 
  • 1 large-sized onion 
  • 2 zucchini
  • 1 bunch of grapes or lemon
  • 1 tablespoon of tomato paste 
  • 1-2 tablespoons of butter 
  • 1 raw tomato
  • 1 pepper
  • 1 teaspoon of salt
  • Optionally purple basil


Recipe

Roast the meat until tender.

Add butter, onion and pepper and fry. Then, add the tomato and add the tomato paste and fry.  

Add boiled chickpeas on top.

Chop the pumpkins and put them in the pot.

Put the sour grape as a whole.

Add salt and cook over low heat for half an hour.
