Sour Zucchini Dish A Konya Specialty
Sour Zucchini Dish is one of the distinctive flavors of Konya’s traditional cuisine. Ingredients
- 2 tea glasses of lamb
- 1 tea glass of boiled chickpeas
- 1 large onion
- 2 zucchini
- 1 bunch of sour grapes or 1 lemon
- 1 tablespoon of tomato paste
- 1–2 tablespoons of butter
- 1 tomato
- 1 pepper
- 1 teaspoon of salt
- Optional: purple basil
Recipe
- Sauté the lamb until it becomes tender.
- Add the butter, onion, and pepper, and continue to sauté. Stir in the chopped tomato and tomato paste, then cook for a few more minutes.
- Add the boiled chickpeas and mix well.
- Chop the zucchini and add them to the pot. Place the sour grapes (whole) on top.
- Season with salt and cook over low heat for about 30 minutes.
